BURRITO BOWL RECIPE:
415 KCAL per portion (serves 4) - 9.3g F, 48.9g C, 32.3g P

INGREDIENTS:
1 pack chicken mince
1 packet of taco seasoning
2 packs of rice
100g pepper
1 large onion
sweetcorn
black beans
salsa
Creme fraiche
coriander
1 tin chopped tomato

METHOD:
1. Slice up the pepper and onion
2. Fry off the pepper and onion until soft, then put aside
3. Fry off the chicken mince until brown, then add in the taco seasoning and fry for 2-3 mins
4. finally add the chopped tomatoes and 50ml water, leave to simmer for 5 mins
5. assemble the bowls - add the rice *uncooked* then top with the mince, black beans, sweetcorn, salsa and veggies
6. leave in the fridge for 3 days

EGG CUPS
112 KCAL per serving (makes 6) - 0g C, 12g P, 7g F

INGREDIENTS:
6 eggs
spinach (chopped)
6 slices of ham
tomatoes
salt/pepper
50g protein cheese

METHOD:
1. preheat oven to 180 degrees C
2. add a slice of ham to each muffin tin
3. then add the tomatoes and chopped spinach
4. whisk together the eggs with salt & pepper, then pour over
5. top with cheese
6. cook for 10 mins until the eggs are set
