What We eat in a Day Holiday Edition / Model and Lifestyle Coach Nina Dapper

Hi loves, welcome to this what We eat in a Day Holiday edition! We was on a little workation in the Netherlands at the beach with the friend Roos and We would love to show what were eating. We can not wait to hear what recipe you would like to try!

Recipe Couscous Lunch:
- 80 gram couscous
- 1/2 a squash
- 1 hand of raisins
- 5 gram mint
- 120 gram halloumi cheese
- 1 cup of olives
- 2 tbsp sundried tomatoes
- 1 small cup of pecan nuts
- 2 hands arugula salad
- 1 tbsp pesto
- olive oil, pepper, salt, chiliflakes, honey
- option: pappadum
Prepare the couscous as written on the package. Cut the squash in smaller pieces and add it to the pan with olive oil. Heat a pan with olive oil and add the squash, pepper, salt and chiliflakes. Slice the halloumi cheese and add it to a dry pan. Turn around after a few minutes. Meanwhile cut the mint, olives, sundried tomatoes and pecan nuts in small pieces.
Mix these with the couscous, raisins, squash and pesto. Make the bowls: add first some salad, top with the couscous, halloumi cheese and pappadum and top with honey.
