What We Eat in a Day - Healthy and nutritious breakfast, lunch and dinner recipe | Sign up to the wellness platform



First of all: WOW!!! I'm overwhelmed by this beautiful community that we have created. I'm so happy and grateful for all the support you have shown since We started talking about the platform and also now after yesterday's pre-launch. We cannot believe that this is the job and that we are on this journey together, this is only the beginning!

To celebrate more We filmed one of the most requested videos, a what We eat in a day video. We was actually so happy about everything We cooked and ate this day, it was delicious! Let know what other recipes you would like to see for the upcoming videos.

Air fryer:

Breakfast - Chia seed pudding with frozen raspberries and cashew butter
- 2 tbsp chia seeds
- 1/2 cup plant based milk
- 1 tbsp maple syrup
- Pinch of cinnamon
- 1 tsp vanilla extract
- Mix all together and let sit overnight in
fridge or at least 4 h
- Add frozen raspberries, banana and cashew butter on top

Lunch - Spinach salad w roasted veggies and miso dressing
- Spinach
- Roasted sweet potato
- Roasted cauliflower
- Thai basil
- Soft boiled egg
- Avocado
- Sauerkraut
- Sunflower seeds

Miso dressing:
- Miso paste
- Olive oil
- Sesame oil
- Rice wine vinagrette
- Maple syrup

Dinner - Spinach and filled salmon with roasted potatoes & carrots
- Salmon
- Dijon mustard
- Spinach
- Feta cheese
- Dill
- Salt & pepper
- Baby carrots
- Baby potatoes
- Pickles and vegan mayo on the side.

1. Butterfly cut the salmon and top it with dijon, spinach, and feta. Then fold the salmon and add more dijon mustard as wanted. Add salt and pepper + fresh dill. Prepare the baby carrots with olive oil and salt and pepper. Put in the air fryer on 390F for 8 minutes.

2. Microwave the baby potatoes for about 5 minutes before adding olive oil and seasoning (I used a pre made packet with garlic and parsley seasoning). Put in the air fryer on 400F for 3 minutes.

3. Plate and enjoy!
